Roasted Butternut Squash and Cauliflower

Butternut squash is one of my favorite vegetables to roast in the oven. This recipe is simple to make for dinner and I usually pair it with roasted cauliflower and/or quinoa.
  1. Preheat oven to 415 degrees Fahrenheit
  2. Peel and chop 1 butternut squash into ½ to 1 inch pieces
  3. Chop ½ a head of cauliflower into ½ inch pieces
  4. Place on a large baking dish with a non-stick silpat or aluminum foil with a spray of olive oil
  5. Sprinkle with paprika or cinnamon (whatever you’re in the mood for that day – smoky or sweet)
  6. Roast in the middle of the oven for approximately 40-50 minutes, stirring once
