My current dinner obsession: Kale Salad

This is my current dinner obsession. I have been having it about 2-3 times per week and it is so good and filling and easy to make. This is a huge dinner salad. The bowl is about 4 quarts. It is super filling and very nutritious. With all of this kale you will for sure exceed your protein intake for the day.
Ingredients
  • 1 bunch of kale, de-stemmed and ripped into small pieces
  • Juice of 2 lemons
  • 1 avocado, chopped
  • 1 tablespoon of paprika or to taste
  • Fixings of your choice – butternut squash (pictured), persimmons, sprouts, tomatoes

Directions
  1. De-stem and rip your kale into small peices using your hands.
  2. Place your kale in a large bowl
  3. Add the juice of 2 lemons and 1 avocado
  4. Use hands to massage the kale with the avocado and lemon making sure to coat all of the kale (the kale should be wilted and about ¾ of its original size in the bowl)
  5. Sprinkle the paprika and massage into the salad
  6. Add any fixings you like
