This is my current dinner obsession. I have been having it about 2-3 times per week and it is so good and filling and easy to make. This is a huge dinner salad. The bowl is
about 4 quarts. It is super filling and very nutritious. With all of this kale
you will for sure exceed your protein intake for the day.
Ingredients
- 1 bunch of kale, de-stemmed and ripped into small pieces
- Juice of 2 lemons
- 1 avocado, chopped
- 1 tablespoon of paprika or to taste
- Fixings of your choice – butternut squash (pictured), persimmons, sprouts, tomatoes
Directions
- De-stem and rip your kale into small peices using your hands.
- Place your kale in a large bowl
- Add the juice of 2 lemons and 1 avocado
- Use hands to massage the kale with the avocado and lemon making sure to coat all of the kale (the kale should be wilted and about ¾ of its original size in the bowl)
- Sprinkle the paprika and massage into the salad
- Add any fixings you like
