I love grilled
vegetables in the summer time. Here is a really easy dinner recipe with lots of
grilled veggies and salsa!
1 cup of cooked couscous,
quinoa, or brown rice (your preference)
Grilled veggies of
your choice (I used eggplant, squash, and bell pepper)
Fresh tomato salsa
with onions and cilantro
1 tsp of chili
sauce (optional)
